I have a similar requirement from time to time. A customer will place an order and select 'Pay by cheque' and then will change their mind, and call us to pay by credit card instead of cheque. Hi JWL,
      Is there any reason some of your customers have trouble with their paypal payment? It's not  a common problem AFAIK. 
I recommend creating a custom payment option and calling it "Paypal by Invoice" of something similar.  BTW -  there's no built in may of changing payment methods after the event.

Do you mean that a customer has paid say by credit card, which has been authorised and the order is showing as pending and you then want to change the payment method?
