Limiting Quantity on a Per Product Basis

Is it possible to limit quantity on a per product basis?

We sell items that are limited edition in nature and often only allow
customers to buy one or two of a given item. When we were researching
ProductCart I found an item in the features that sounded like it would do
what we wanted to do, but it turns out it just limits the total number of all
items that can be added to a basket.

Regardless, is this something that can be achieved with ProductCart? Are
there any developers that frequent the forums that might have the know-
how to do this?
