I'm looking for a way to show the number of colors available for a product on the product list page, maybe say something like "5 colors."  Like on this page, show title, price then number of colors.

I'm working on a store now that will use the "product reviews" feature.  We wanted to show the number of reviews currently posted, so I built a small bit of code to count the number of entries. 
 
Similarly, it wouldn't take that much to clone the code that builds the product options dropdown and alter it to count the number of colors, then print it to the screen.  If you are comfortable with code, I'd start there.  Alternatively, seek out a developer.

Well I'd like to do that too once I finish getting our customer reviews promotion finished.  So I'm guessing there's no pre-determined way in PC to port this or color availability to the product list page (i.e. needs to be custom coded)?

Correct.  Take for example the "M" format of the viewcategories.asp page which is the "multiple add to cart" version.  You get a qty input and buy button for each product except those with options.  For those products you have to drill down to the product page to place the item into the cart.
