Is there a way to track paypal standard payments (conversions) with Google Analytics?

Yes. Customers are taken back to the ProductCart-powered storefront when they complete the PayPal Standard payment. So as long as you have your http://wiki.earlyimpact.com/widgets/integrations/googleanalytics/ga_ecommerce - store configured to track e-commerce transactions , you should be fine.

The setup instructions for Paypal standard product integration say to turn off auto return

So the customer does not return to PC? Is this a mistake in the instructions and should the customer be returned to a PC page?
