Does anyone know a way to set the custom date field at checkout to be a minimum of 3 days in the future? We can't allow users to have dates less than 3 days.

I'm trying to imagine what you are trying to accomplish here? What is this date to be used for?

We are using the field as a preferred delivery date and are unable to accept dates less than 3 days in advance as we cannot organise delivery before then.

I would suggest you engage a developer and introduce logic to enforce your business rules. Shouldn't take a lot of time.
