Does anyone know how I might configure PCart to default
display the brand name with each product?

I'm not sure if you got an answer to this or not, but you can turn that on and off in the admin. Go to Store Management Tools --> Manage Products --> Manage Brands. Check the box that says "Show brand on product details page" and that should do it. It will display the brand name in text, and allow the customer to click on it to view all of the products for that brand.
