I am new to using Product Cart and am just testing my site right now,
but I noticed that on some of my products I have a color option added
but product cart does not force the user to choose a color. You
can just enter in your quantity and continue on. Is there a place
to do this in product cart, or do I have to code my own validation?

Make sure that you are setting the option as "Required". See the section of the User Guide that refers to product options for more information.
